Tomato Artichoke Soup

We all loved this soup.

My girlfriend served it at her Autumn party.

My cousin is having a baby shower in October and I have been asked to bring this. I’m a little worried about transporting in my car though!

Ingredients:

30 oz diced tomatoes, canned or fresh

12 oz of frozen artichokes

3 cups chicken broth

1 onion sliced into quaters

3 smashed garlic cloves

21/2 tsp dried basil

11/2 tsp kosher or sea salt

fresh ground pepper to taste (about 1/2 tsp)

Prepare:

Combine ingredients in a large crock pot or slow cooker.

Cover and cook on low for 8-9 hours

Use a blender on medium speed to puree ingredients, and add pepper
CAREFUL SOUP IS HOT!

Serve with bread, cheese, crackers, and a mixed salad to make it a meal
